Course number and title:  FSTB14H3 - Why We Cook

Course description:  An exploration of how eating and cooking traditions around the world have been affected by economic, environmental, and social changes, including imperialism, migration, climate change, and urbanization. Topics include: immigrant cuisines, commodity exchanges, and the rise of the restaurant. Tutorials focus on exploring cooking traditions from across time and around the world. exploration of how eating traditions around the world have been affected by economic and social changes, including imperialism, migration, the rise of a global economy, and urbanization. Lectures will be supplemented by cooking demonstrations. 

Estimated course enrolment: 60

 Number of Hours: 0.5 FCE 

Sessional dates of appointment: Specific duties will occur between January 1, 2026 and April 30, 2026.  

Salary:  Starting September 1, 2025 the following rates of pay apply for half courses (F or S), inclusive of vacation pay: $9,820.70 for a Sessional Lecturer I; $10,510.04 for a Sessional Lecturer I-Long Term; $10,510.4 for a Sessional Lecturer II; $10,760.23 for an Sessional Lecturer II-Long Term; $10,760.23 Sessional Lecturer III; and $11,030.34 for a Sessional Lecturer III-Long Term. Please note that should rates stipulated in the collective agreement vary from rates stated in this posting, the rates stated in the collective agreement shall prevail. The rate of pay is established by the Collective Agreement between Canadian Union of Public Employees (CUPE), Local 3902 Unit 3 and the University of Toronto. 

Minimum qualifications:  PhD in History with experience in Food History. University teaching experience preferred. Technical and pedagogical competencies in relation to the online delivery of courses would be an asset. Besides knowledge of geological evidence of Earth evolution, knowledge and skills in regard to teaching students basics of mineral, rock and fossil description and identification are required. 

 Past teaching experience is a more relevant criterion than the need to acquire experience in respect of this posted position.  

  

Preferred qualifications:  

  

Description of duties:  

All normal duties related to the design and teaching of a university credit course, including preparation and delivery of course content; development, administration and marking of assignments, tests and exams; calculation and submission of grades; submission of a deferred exam; holding regular office hours.

Lectures: Thursdays 11:00-1:00PM
